CoolSculpting is a single branded technology, now owned by Allergan Aesthetics (an AbbVie company), though it was originally developed by Zeltiq. So you're not really comparing different "machines" from different manufacturers, the way you might with lasers. What varies is the applicator: handpiece options vary and are generally designed to fit different areas such as the flank, abdomen, submental area, or thighs, and they differ in the amount of tissue they can draw in and cool. Your clinician selects the applicator based on the fat pad's size and pliability at that particular site, not personal preference.
One thing worth knowing before you sign up: CoolSculpting carries a rare but real risk called paradoxical adipose hyperplasia, where the treated fat actually enlarges months later instead of shrinking, and this can require surgical correction if it occurs. Results typically develop gradually over about one to four months as the treated fat cells are cleared.
